Here's a yummy sandwich that takes advantage of the gorgeous in-season apples. The husband was skeptical at first, but declared it delicious and made himself another one the next day. If you can get it, Trader Joe's Tuscan Pane is the best bread for this sandwich.
2 slices crusty white sandwich bread, toasted
4-5 slices deli chicken
1 Tablespoon goat cheese
1 teaspoon Dijon mustard
Spread goat cheese on one side of bread, top with apple and chicken slices. Spread Dijon mustard on remaining piece of bread and top sandwich.
