The holidays have been crazy, so here is a super easy and delicious recipe. The spread is pretty adaptable, try it in a grilled cheese, in miniature on baguette rounds, or on a large slice of sturdy bread, which is how the husband and I ate it the other evening. Experiment with the proportions until you find what you like best.
2 cups shredded cheddar cheese
3/4 - 1 cup mayonnaise (light is OK)
1-2 Tablespoons dry ranch dressing mix
Bread of your choice, in 1/2 inch thick slices
Combine cheese, mayo, and ranch mix. Spread on top of bread slices. Broil until cheese is melted and delicious.
